I have been going to Steamboat for a long time now and usually I have had my own skis to use. Unfortunately I have outgrown my skis and need to rent because buying skis and boots for me is about $1600. The last time I rented skis was when I was a beginner and because of this I don't know what to get. I can do and have done almost everything on the mountain from the bumps to the chutes to the trees and everything in between. I don't know what kind of skis to rent though and I am stuck between the high performance and the demos. Is there any difference other than the price? Thanks.

Not sure where you are renting from to tell what the difference is, but for real good all mountain skis try the Fischer Watea 84's and the Nordica Top Fuels.
Both are great skis.

Check with the Guys in the Yurt at the top of the Gondola. I have had several friends who have used their service and been very happy. If you tell them what your ability, desires, etc are, they can set you up with a set of skis. Steamboat Ski and Bike Kare and One Stop Ski Shop, both downtown are two others I recommend.

Any good ski shop will help you decide what to rent and most will credit the rental fees toward purchase if you want to buy after the demo.

So would it be alright if I decide one day I don't like them I can bring them back? Also if I want to try a few pairs of skis out for the week can i rent them return them and then get a different pair without any extra cost

At the Yurt, you can swap out as many times a day as you want. take in the ones you have and they will set you up with a different make/model/pair.
